I’ve had a love-hate relationship with raw tomatoes my entire life. As a kid, I would have found salsa revolting. But ever since Chi Chi’s came to town in the 80’s with their super fresh salsa, I’ve learned to like raw tomatoes, a little at a time. Here’s my version of a super fresh and delicious recipe.

Garden Fresh Salsa


4 vine ripened tomatoes, cut into a small dice
1/2 jalepeno, seeded and minced (use a whole pepper if you dare)
juice from one lime
1/3 c chopped fresh cilantro
1/2 medium onion, diced
sea salt to taste

That’s it. Throw it together, and enjoy on top of shredded chicken, tacos, salads, or enjoy with chips.
